Enjoy a taste of the Mediterranean with minimal effort!

Ingredients
4 chicken thighs (bone-in, skin on)
4 legs (bone-in, skin-on)
1.5lbs small potatoes, quartered
2 tbsp olive oil
Juice of 1 lemon
3 cloves garlic, minced
½ cup olives
¼ cup sun-dried tomatoes, chopped
1 tsp dried oregano
Salt & pepper to taste
Preparation
Preheat oven to 400°F.
Toss chicken and potatoes with olive oil, lemon juice, garlic, oregano, salt, and pepper.
Spread on a baking sheet, adding olives & sun-dried tomatoes.
Roast for 35-40 minutes until golden and crispy.
