About the Recipe

Enjoy a taste of the Mediterranean with minimal effort!

Ingredients

  • 4 chicken thighs (bone-in, skin on)

  • 4 legs (bone-in, skin-on)

  • 1.5lbs small potatoes, quartered

  • 2 tbsp olive oil

  • Juice of 1 lemon

  • 3 cloves garlic, minced

  • ½ cup olives

  • ¼ cup sun-dried tomatoes, chopped

  • 1 tsp dried oregano

  • Salt & pepper to taste

Preparation

  • Preheat oven to 400°F.

  • Toss chicken and potatoes with olive oil, lemon juice, garlic, oregano, salt, and pepper.

  • Spread on a baking sheet, adding olives & sun-dried tomatoes.

  • Roast for 35-40 minutes until golden and crispy.
